Correct use of grease separators

According to regulations, grease separators must be used in every catering, food processing or similar industry in which sewage containing grease is produced and removed. In particular, this is the case in the kitchens of hotels, restaurants or canteens, but also in all meat-processing businesses such as butchers. If a grease separator is not used, in violation of the regulations, this can lead to deposits in the sewage system that are difficult to remove. Failure to comply with the regulations not only results in a fine, but can also lead to serious economic consequences. In accordance with the costs-by-cause principle, the aim is to ensure that animal and vegetable fats and oils are properly separated and disposed of directly at the source, for example in catering and kitchens. The grease separator systems from Zehnder Pumpen are in conformity with DIN EN 1825-1/DIN EN 1825-2 and the German annex DIN 404-100. This is where all standards for the systems and regulations for their use are specified. It is important to note that the grease separator systems should be emptied at least once a month, but at the latest when the filling capacity has been reached, depending on the requirements.

How grease separators work

In a nutshell, grease separators work according to the principle of gravity. Oils and fats float to the top due to the difference in density compared to water and form a layer of grease. In this way, the substances in the system separate all by themselves, which means that the oil and grease can then be retained and does not end up in the sewage system. When installing the grease separator system in your kitchen, please note that those installed below the backflow level also require a lifting unit for connection to the sewage system.
